Step by Step

Just walk through the stone gate and the aroma of must and wood envelops the senses. The tour starts in the vineyard, where Lambrusco and Malvasia vines line up on red clay soils; here, sustainable pruning practices and the effect of the Po Valley's microclimate on the grape's aromatic concentration are explained.

Under the shade of plane trees, you descend to the underground cellar dug out of tufa, the walls of which maintain a constant temperature all year round. Among French oak barrels, the oenologist explains each stage of the ageing process and the differences between natural sparkling and traditional fermentation methods. The silence is broken only by the timid bubbling of the yeasts that are still at work.

In the tasting room the tastiest part of the visit awaits you. First a dry, floral and fresh Malvasia, then a frizzante Lambrusco with ruby tones that cleanses the palate and, finally, a reserve red Colli di Parma, with notes of black cherry and soft spices. Each glass is accompanied by a 24-month-old slice of Parmigiano Reggiano, feline salami and homemade bread, enhancing the nuances of the wine.

To close, a brief stop at the estate shop allows you to purchase bottles with international shipping or pick them up at the end of your trip. Staff share tips on serving temperature, preservation and typical regional pairings, from tortelli di erbetta to culatello di Zibello. You'll leave with more than a souvenir: an authentic taste of the Parmesan countryside.
